Today we started the day “doing good” by going to the Tunnel To towers Run in Savannah… but that will be a different post that’ll come tomorrow as a race recap!
After the race, we rushed to the house because Bobby was going with some friends to Columbia to the Georgia vs. South Carolina football game. Some friends invited us over to their house to watch the game where everyone was supposed to bring a dish. I decided to go by myself and made one of my favorite salads!
My mom used to make this recipe just for special occasions and I loved it so much that I learned how to make it… well, actually is pretty simple! So here you go:
GOAT CHEESE AND CARAMELIZED WALNUTS SALAD:
– A big box of mixed leafy greens
– A small packet of goat cheese (if you don’t like it you can substitute with feta)
– ½ a bag chopped walnuts (or pecans)
– 1-2 Tbsp. grass fed butter
– Coconut sugar to taste
– Olive oil
– Balsamic vinegar
– Sea salt
– Black pepper
– 1 Tbsp. honey
In a pan add the butter and the chopped walnuts and cook in medium-high heat. Start adding coconut sugar until it starts melting and sticks to the nuts. Once you try them and feel they are sweet enough put them aside in foil paper…it usually takes a bit more of sugar than you’d expect.
In a bowl add the leafy greens (previously washed) and with a fork start crumbling the goat cheese and adding the nuts while mixing everything well.
For the vinaigrette combine two parts of olive oil with one part balsamic vinegar. Add the honey, salt and pepper to taste and mix well. Add the dressing right before serving or put it aside so everyone can have as much or as little as they want, that’s what I usually do and you also prevent the greens from getting mushy.
This takes just like 10 minutes to put together and is delicious! Let me know if you make it!
