I’m so excited that Spring is almost here, and that means that race season is about to start! After running 2 marathons in less than 3 weeks last Fall I took a break from running, but now I’m ready to get back into it and it feels GOOD.
Honestly I haven’t planned my racing schedule for the year but the only certain thing in my future is that I’m participating in the Publix Savannah Women’s Half Marathon & 5K. Last year I set my half marathon PR on this beautiful race with a time of 1:40:29, which I know it’ll be really hard to beat (especially after taking off over 2 months from running)
As a long distance runner and triathlete one of the things I get asked the most is what do I eat before and after my runs? The answer is always the same: it depends. Yes, it depends on what type of run I’m going for, the time of the day, duration of the run, effort, etc. but all I can say is that bananas are my best friend!
Today I want to share with you a healthy recipe that can come in handy for the night before a long run: vegetarian/vegan pizza! For this I went to our local Publix and got all the ingredients.
Talking about Publix, I’m SOOOO excited about their new layout that makes it easier to identify exactly where the organic produce is! Also it makes me happy that lately every time I go I find new specialty products that I used to have to order online or go to a specialty store to get, like unsweetened frozen acai… Thanks Publix!
If you want to make your pizza completely vegan use pita bread or some crust that doesn’t have eggs or dairy in it (the one I used does). You’ll also notice that I use Daiya dairy free cheese because I have a dairy sensitivity so feel free to use regular mozzarella cheese or no cheese at all. Last but not least, use the veggies that you like!
- 1 cup Rao’s Italian tomato-basil or marinara sauce
- Boboli 100% whole wheat pizza crust or 100% whole wheat pita bread
- ½-1 cup Daiya shredded mozzarella or regular mozzarella cheese
- 1 tbsp. dried oregano
- ½ chopped white onion (optional)
- 1 cup baby spinach (optional)
- 1 chopped red bell pepper (optional)
Pre-heat the oven to 450. Spread the sauce on the crust and sprinkle the dried oregano Then put the shredded cheese and add your favorite veggies.
Cook in the oven for 10 min., let it sit for 5 min. and enjoy!
This pizza will satisfy your cravings for something salty, delicious and healthy plus it’ll provide you with the necessary carbs to get you through your long run the next morning!
